Sweet and very spicy, with fruity hints from the habanero and a depth only bay leaves can bring, the unusual element of this jam comes from the base being made up of candied cucumbers. Plenty of garlic has been packed into this creation too because why not?! Try this savoury jam poured over cream cheese - it’ll be the star of the grazing board, spread it thinly over some crusty bread, drizzle over your rice paper rolls, dip in your fried spring rolls, spoon into any recipe you’d like a hit of flavour and heat, a perfect marinade for bbq ribs, paint over roast turkey, lamb, venison, duck - it really compliments sweet meats, remember a little goes a long way. Gotta mention a warning - she’s hot!
