We’re so proud we were able to capture the unique, delicate floral notes from our sustainably foraged saffron milk cap mushroom, found living symbiotically with pine trees. If you’ve never seen or tasted one before, it’s an honour to introduce you. Bright orange flesh with a saffron coloured milky juice that drips from the cut stem made upon harvesting. A very different taste and texture from your everyday supermarket button mushroom; if they’re considered slippery and soft, the saffron milk caps are considered meaty, dense and firm. Familiar earthy hints relate the two, but the floral-ness of the pine mushroom really sets it apart. We’ve used fresh thyme, locally grown organic saffron, and our aptly named ‘red cap mushroom chillies’ to enhance the hotsauce without overpowering the delicate taste of the pine mushrooms. Laborious to harvest, clean and process with care, yet well worth the work. We know you'll appreciate this rare, unique and gourmet hotsauce. Try over arancini and good quality wood-fire pizza.

Ingredients: saffron milk cap mushrooms, naturally fermented white vinegar, saffron, sugar, salt, red cap mushroom chillies, herbs & spices.

Storage: shelf stable in a cool, dark location; although if you notice any effervescence it indicates that fermentation has started back up, not a problem - simply store in the fridge. Our 'best before' dates are written underneath the jars.
