Let us introduce you to our new obsession. If you’ve never tasted a sunchoke before, the flavour is reminiscent of caramelised onions and earthy potatoes. They may look like ginger but the tubers are in fact related to the humble sunflower. Tedious to harvest, clean and process but absolutely worth the effort. These pickles are a labour of love. The age old preserving techniques we practice ensures the texture of the roots are maintained, resulting in a finished crunch similar to water chestnuts. The sweet and sour brine goes perfectly with the nutty tones of the sunchokes. Thin, oddly cut slices means plenty of product is packed inside the jars whilst mustard seeds suspended throughout impart a slight bite without the use of chilli.
These unconventional pickles fit right in anywhere you’d add a classic pickle. Burgers, cheese toasties, added to a potato salad, topped over a quiche, and of course, enjoyed straight from the jar. The leftover brine also goes great with some mayo or olive oil to dress a salad.
