Inspired by a French potato salad, this fermented & pickled zucchini relish is somehow delicate yet full bodied in flavour, fruity notes from the caraway and dill are pulled together with the bite of the onion and apple cider vinegar. One of our favourites. Phenomenal in a quiche, a cheesy omelette, over roasted potatoes, a tart, potato hash, in a sandwich, topped over fish or as a side on its own. Highly recommended.
